Creating the wines


T
he vines which have surrounded Château Pouilly since 1551 allow full expression of the grape, because the amount of handling and transport involved are limited. 

In keeping with tradition, its vines are grown with treatments kept to a minimum and the soil is fertilized with natural manure.

The various plots, benefiting from the best south-eastern exposure with marl and limestone soil, derive the richness and mineral notes typical of Pouilly-Fuissé from 170 million years of history. 

Harvests are carried out by hand as well as mechanically.

A completely renovated system of vats and modern equipment ensures the greatest quality of development after pressing and vinification.

Two-thirds of the wine is developed in enamelled heat-controlled vats and one-third in oak barrels over a period of 12 months.

Château Pouilly wine is the result of an assembly of wine from the tanks and barrels in differing proportions according to how they have developed and the vintage.
